
Salmon Cakes
This is a great little recipe, high in fat and simply delicious. You can serve them immediately when warm or serve cold as a snack, straight from the fridge, dipped in some homemade mayonnaise. Nice and filling!
Ingredients:
800 g salmon (preferably not farmed) (cubed)
1 onion (chopped)
2-3 egg yolks
1-1,5 dl of coconut cream
Garlic as much as you want (chopped)
Fresh coriander (1 bunch) (chopped)
Salt and green or black pepper
Method:
Mix all ingredients in a food processor or with a blender until it becomes a nice smooth paste. Add salt and pepper to taste. I use 2 teaspoons of Himalayan salt.
Make cakes by hand, approx. 2,5 cm (1 inch) thick and fry them in olive oil over medium heat until one side is nicely browned and then fry the other side.
Serve with homemade mayo, fresh in-season veg (asparagus, kale chips, etc) and a squeeze of fresh lime juice.
